(3.21.13) Chef Peter’s Mussels Recipe and 2011 Barbera Pairing

While travelling through Oregon I met up with an old friend.  He had just come from the coast and had just procured some beautiful black mussels.   I was travelling for the winery and had our 2011 Barbera in my possession.  The recipe that follows is how we prepared them and it paired perfectly with our wine.  Hope you enjoy it as much as we did.  Salute! - Chef Peter Janiak

2 pounds

cleaned mussels

1 each

onion diced

5 each

garlic cloves minced

1/4 cup

olive oil

1/4 teaspoon/pinch

saffron

1/2 teaspoon

chili flake

1/4 cup

red wine

1 Tablespoon

chopped oregano

1 each

28oz San Marzano Tomatoes

2 Tablespoon

chopped parsley

1 each

warm italian bread

2 Tablespoon

high quality olive oil to garnish

1.       If you have a ricer, rice the tomatoes, if not you can use a food processor - just remember to use all of the tomatoes and their juice.  Once ready reserve for later.

2.       In a pot big enough to hold all the mussels, heat oil over medium high heat.

3.       Add onions and cook until soft and translucent.

4.       Add garlic and cook for 1 minute.

5.       Add saffron and chili flake, cook for 1-2 minutes to allow flavors to bloom.

6.       Deglaze with red wine.

7.       Add tomatoes and oregano.

8.       Cover and cook at a slow simmer to allow for the tomatoes to finish breaking down. This should take about fifteen minutes.

9.       Add Parsley.  Add mussels and cover.

10.   Cook mussels into they all open and discard any that haven’t after about five minutes

11.   Drizzle the finishing oil over the serving bowls.

12.   Serve in bowls with warm Italian bread.

02.07.13 - 93 points, Wine & Spirits Year's Best Zinfandel 2013,  2010 Home Ranch Zinfandel

Edoardo Seghesio planted this vineyard in 1895 on the western benchlands of the Alexander Valley, those original vines accounting for about one-third of this zin. The cool 2010 season created this complex blend with petite sirah (9 percent), a wine that develops floral scents over layers of tar, black currant and crushed black pepper. Saturated with flavor, this is ready to decant now; if you cellar it, wait ten years or more for the secondary flavors to develop.”

Connoisseurs’ Guide awards 91 points, 2 puffs to Seghesio Sangiovese

Connoisseurs’ Guide to California Wine awarded 91 points and 2 puffs to Seghesio 2009 Sangiovese, ranking it among “the very best local efforts.”

Here’s the full review:

“Segeshio has made a name for itself as a producer of deep and impressively stuffed Zinfandels, and the winery stamp is not at all hard to find in this very rich, fully ripened Sangiovese as well. The wine shows plenty of fruity concentration and depth, and it surprises by being energetic and very well-balanced for the big wine that it is. It sports a fine spine of tannin yet steers clear of toughness, and it shows great continuity and finishing length. It ranks right now with the very best local efforts, and it will only get better with age.”
